Crusty bread with garlic basil pesto

This is the ultimate garlic experience! 

Garlic contains the sulphur containing compound allicin and is considered a superfood for its antibacterial, antiviral, anti-fungal and cholesterol lowering properties. By crushing the garlic and leaving it out for 10 minutes before lightly heating you preserve its benefits and increase its enzymatic potential.

We love mixing our fresh garlic with fresh basil to create a smooth pesto and serving it on warm crusty Coconut Flat Bread Rolls alongside a nice soup. Just the most delicious combination. 

By the way, we found that organic garlic has the best aromatic flavour.

Pesto Recipe 

Serves 4

Ingredients: 

🥥  2 Cups of fresh basil 

🥥  ½ Cup of virgin olive oil 

🥥  3 – 4 Cloves of garlic (cut finely or minced) 

🥥  2 Cloves of garlic thinly sliced as garnish

🥥  A pinch of Himalayan Pink Salt to taste 

🥥  Freshly ground pepper to taste 

🥥  2x Coconut Flat Bread Rolls halved 

Method: 

  1. Using a food processor or blender, process the basil and olive oil to a fine paste. 
  2. Add in the garlic and continue processing so that it is incorporated with the paste 
  3. Transfer to a small bowl then add the salt and pepper, mixing it into the pesto to taste 
  4. Slice open the Coconut Flat Bread Rolls and heat up under the grill or toast them
  5. Add pesto to the crusty bread and serve warm. Garnish with more garlic.

 

 vegan tomato soup

Vegan Tomato Soup Recipe 

Serves 4

Ingredients: 

🥥  1 Teaspoon of olive oil 

🥥  1 Medium onion chopped

🥥  2 Cloves of garlic cut finely (more garlic, oh yeah!)

🥥  1350g of chopped fresh tomatoes

🥥   A handful of basil leaves for garnish

🥥  2 Teaspoons of Himalayan Pink Salt to taste 

🥥  Freshly ground pepper to taste

 Method: 

1. Place a pan over medium heat and add the oil, and once hot, add the garlic and onions then cook for a couple of minutes until golden 

2. Add the chopped tomatoes and continue cooking on medium heat while stirring every few minutes to allow them to soften and break down 

3. Remove from the heat, add the basil, salt and pepper then blitz with a stick blender until smooth 

4. Transfer to bowls and then serve hot aside of the crusty bread with garlic basil pesto. Enjoy!
