Eat the rainbow
Eating the rainbow has never been more delicious. This is the ultimate whooper if you want to hit all the 'health points' the easy way: paleo, low carb, allergy-friendly, vegan and obviously gluten-free.
- Chopped red cabbage
- Grated carrots
- A slice or 2 of cheese (I used Violife)
- Some cucumber
- A leaf of lettuce
- and top it all up with mayo (I used the egg-free one from Hunter & Gatherer)
Simply arrange them all in your favourite colour order on our Coconut Flat Bread Rolls and enjoy. This has become an instant classic and also great as beautiful party food.
PS: I held my whoopers together with Chinese umbrellas...did you know there is real Chinese newspaper rolled up inside them?
