Wellness EQ's Low Carb recipes
Low Carb Health Specialists Issy Warrack and Dr Estrelita van Rensburg from Wellness EQ put together a selection of tasty recipes with our Coconut Flat Breads.
All recipes are low carb, easy to make and perfectly matched with our Coconut Flat Breads. Each recipe is for one serving.
Please note that these recipes are not vegan nor completely allergen-free but hopefully they will inspire you to adapt them to suit your dietary needs and choices.
Spicy Courgette Flatbread: Net carbs 10g
1 medium courgette, thinly sliced
2 tsp harissa paste
3 tsp olive oil
small handful green beans, chopped
1 salad onion, finely sliced
1 tbs water
1 tsp tahini paste
1 clove garlic, chopped
squeeze lemon juice
1 tbsp yoghurt
1 Calvin’s Original Coconut Flat Bread
- Mix harissa paste and 2 tsp olive oil and cover courgette.
- Fry courgettes for 2 mins each side. Set aside.
- Fry onion and beans in 1 tsp olive oil for 1 min, add water and steam for 2 mins.
- Mix tahini paste, garlic, lemon juice and yoghurt in bowl.
- Slice Flatbread, and create pocket.
- Spoon bean mixture in, followed by spicy courgette and top with yoghurt mix.
Halloumi with pepper rainbow: Net carbs 4g
70g Halloumi, sliced
1 tbs olive oil
1 mushroom, sliced
40g red pepper, sliced
40g yellow pepper, sliced
4 lettuce leaves, shredded
1 tbsp crème fraiche
1 Calvin’s Original Coconut Flat Bread
Salt and pepper
- Fry halloumi in olive oil until golden. Remove.
- Fry mushrooms and peppers for 2-3 mins.
- Season
- Split flatbread.
- Pack in shredded lettuce, mushroom and peppers.
- Add crème fraiche.
- Top with halloumi.
Mediterranean Flatbread: Net carbs 3g
50g Manchego, grated
1 med tomato. sliced
40g Prosciutto, shredded
4 lettuce leaves, shredded
1 tbs mayonnaise
1 Calvin’s Original Coconut Flat Bread
- Split flatbread.
- Fill with lettuce.
- Layer Manchego, tomato and Prosciutto.
- Top with mayonnaise.
